Mini Chicken Quesadillas

Ingredients
1 ½ Cups Leftover Finely Shredded Oven Roasted Chicken
1 ½ Cups Shredded Mexican Blend Cheese
⅓ Cup Restaurant-Style Salsa
¼ Cup Chopped Fresh Cilantro Leaves
Salt, to taste
Black Pepper, to taste
1 Cup Refried Beans
16 Flour tortillas, warmed
3 Tablespoons Canola Oil
Guacamole, for serving
Pico de Gallo, for serving
Sour Cream, for serving
Directions
- Preheat oven to 200 degrees F.
- Use a medium bowl to combine shredded chicken, cheese, salsa, and cilantro. Add salt and pepper to taste.
- On half of a tortilla, spread refried beans, top with chicken mixture, and fold over to close the tortilla in half. Repeat with the remaining tortillas.
- In a large cast iron skillet, heat 1 tablespoon of canola oil over medium/low heat. Add quesadillas to the skillet in a single layer and cook until golden brown on both sides, 1-2 minutes each side.
- If planning to serve later, keep warm in the oven for 30 minutes.
- Serve with your favorite toppings and salsas. Enjoy!
